    Just kegged up the first half of this batch and WOW! It is great I can not wait till I get it cold. It has a great balance of banana & clove with a good supporting rich wheat/vienna maltiness character to it. I am really digging how well balanced this seems to be with the yeast taking a slight step forward in the aroma and flavor. And the malt flavors that came out from the decoction, Holy Crap! they are great, I don't think I will be doing another wheat beer with out one.

    It finished out at a 1.014, which was a little higher then I had hopped for was shooting for 10-12, but still in style guidelines, now the OG is a different story. 6.4% is a little high for the style, but it will do . The body on it seems a little thick, but I am sure that the carbonation will thin it out to where it should be.

    Definitely a keeper of a recipe for me, why did someone not tell me of the wonderfulness that is Dunkelweizens!? I think I may toss the Choco malt out next time though, and see what a true traditional DW is like.

    Dunkelweizens are badass. They were pretty much all I drank in Germany.

    I mash in an 8 gallon aluminum kettle. I have to date only done single infusion mashing with 1-2 batch sparges. Is decoction a huge, difficult step? My eyes kinda went on screensaver when reading Palmer during that part...

    In any event, had an AWESOME dunkelweiss the other night (can't recall the name), and I am definitely interested in getting one going to be consumed for late summer

    If you have another Kettle handy that can handle the volume of the decoction then, no I don't think that it is a huge difficult step. It can be time consuming, you can plan on adding an hour or two to your brewday.

    But I feel that it is essential to getting a dunkelweizen right. This looks like a good recipe I may have to give it a shot.

    Let me just say that I had quite a few pints out of this keg and it was bad ass!!!!!
