I've done cream ales with maize or rice and they both are good. The corn adds a little corn taste in the background while the rice makes the beer more clean and crisp.

Are you talking about rice as in rice hulls? If so how much would you add to a 5gal batch?
no flaked rice added to mash. about 1lb would be enough.
Do you have to cook it before, seems like I read something like that in papazians book? Sorry for all of the questions but I may try some rice.
thats the good thing about flaked rice just throw it in the mash.
I have never tried it but I've heard you can sub minute rice for flaked rice. I've been thinking of trying this to save $$$.
So what adjunct do I use corn rice or none?
