I recently made a batch of banana wine in a 5-gallon carboy. Every wine that I've tried to make including this one ends up with a high alcohol/ethonal taste. The underlying flavor is normally fine.

I use a hydrometer and get the potential alcohol around 13% and spec grav 1.100. I rerack as sediment gathers and keep it in a dark place. Even after aging in bottles this sharp fuel taste will not dissipate. Any advice? Just hate playing the waiting game over and over to the same end results. Please and thanks!
