    Default taps explained

why choose the 525 or the 575? can I use the creamer 575 for any beer?

what if my tap is below the top of the keg?

Yeah, you could use the 575 for whatever, it operates the same as the 525 when you pull the handle forward. The only difference is when you push the handle back you can top off the head.
Pushing the Perl handle back moves a stainless
steel piston, exposing small holes. The turbulence
created by beer passing through the holes
produces a creamy head. When the handle is
    released, an internal compression spring
moves the piston back, stopping the
    beer flow.

In theory it is, but you can do the same thing by partially cracking open a regular faucet.
