Well living in the south that shouldn't be too hard to find. Even around my area there are several sources available. I'm thinking I might need to attempt something like that.

Got the second batch. Here's a pic of the whole haul in Kevin's (cvillekevin on tbh) truck...that's 124 gallons, half a ton of cider. I got 9 gallons myself. 6 for fermenting, 3 for drinking. Heated up, with bourbon...awesome. This stuff is great juice, too. Staymans and Pink Ladys, nice and tart, OG @1.060. Not sure what I'm gonna do with mine right now though...I tossed k-meta into it before we left for the holiday. I'm contemplating mashing some crystal malts and adding that to some of the cider.

Can you boil the juice? I have 3 gallons but I dont think I have campden.

Do NOT boil the juice, whatever you do. My last batch didn't get k-meta or pectic enzyme, and it turned out great. I think the k-meta and pectic enzyme strip out some flavor, to be honest. I really like the results of this last batch. It's not as clear or as "clean-tasting", but it's pretty damn good...and there's no infection...so don't worry about that.
