If you'd like to improve on the texture of the wings, about 20 minutes before baking in a big bowl season them with a little salt and some white vinegar (maybe several Tbs) and then coat liberally with Corn Starch. It will improve the crispiness and aid in sauce adhesion. Don't use flour as it can get gluey, especially if it's too thick or sits in the liquid too long. You should have put this in the wing thread yo.
