Default 1lb Hammer

Gonna push my big stout brew back one and brew this guy this week. I have a ton of hops from last year that were in an air conditioned storage unit for about 5 months so they need to be used. I'm going a bit experimental/overboard on this one. Gonna use an entire pound of amarillo leaf hops that are still sealed from hopsdirect. This is what I'm thinking:

Original Gravity 1.093
Terminal Gravity 1.017
Color 13.29
Bitterness 153.5 IBU
Alcohol (%volume) 10.1 %

8 lbs. Belgian Wheat Malt
8 lbs. Pale Ale Malt
2 lbs. Belgian Aromatic
3 oz. Amarillo (Whole, 8 %AA) boiled 60 min.
4 oz. Amarillo (Whole, 8 %AA) boiled 20 min.
5 oz. Amarillo (Whole, 8 %AA) boiled 5 min.
2 oz. Amarillo Dry Hop 7 days before kegging
2 oz. Amarillo Dry hop 1 day before kegging

Yeast : WYeast 2565 Kolsch

I've used the kolsch yeast on a wheat IPA before and I loved it.

I put away ten gals of an American Wheat that started about 1.050 a couple months ago that used nothing but amarillo with additions from 30-0 only. The wheat went fantastic will all that lovely aroma that only amarillo seems to give off. I like the kolsch yeast choice, as well; are you gonna ferment it low or just let it go as it wants?

I'll take 3 via trade.

Don't forget rice hulls! 8 pounds of wheat = sticky sparge.
