I bottled a Dark Strong that was around those same gravities after only around 3-4 weeks in primary and it never carbed. Even if the yeast is still in suspension, doesn't mean it is going to be able to work through even the simplest of sugars. Better safe than sorry.

Speciality grains, steep for 25 min @155F:
4oz Chocolate Malt
8oz Munich Malt
11oz Caramunich

Extract:
3lb. Light DME
10lb. Extra Pale LME
1lb. Dark Candi Sugar

Hops:
1oz Styrian Golding 3.5AA, 1.5oz Hersbrucker 2.4AA (60 Min)
1/4oz Styrian Golding 3.5AA, 1/2oz Hersbrucker 2.4AA (5 Min)

Yeast:
White Labs Trappist Ale 500

I bottled this a week ago, had to try one tonight. Very strong, very little carbonstion, but not bad! Will report back in a week. I always try my beers a week after bottling, I know it's too early but WTF.

Nice. I usually try a brew at about day 4 then leave it alone for while after that. This is a brew that will only get better with age as it mellows. Are you planning a side by side comparison sometime down the road?

I'm wondering if this beer would do well on tap. If it is more difficult to bottle, wouldn't force carbing it yield better results. Plus, it can always be bottled from the keg later. I'm going to bottle mine next weekend, one way or the other.

Probably the best thing to do Brian. I added yeast to mine right before bottling and it still has not carb'd up decently yet.
