I had mine in the garage (35-45 Deg)for about a week, per advice from contributors here , I moved it into the basement (65 - 69 deg ) and after 1 week in there it was pretty well carbed. The taste was ok , smeel was good , pretty murkie when i poured it though, but it had a 1&1/2 - 2 inch head on it so I was pretty satisfied. 1 more week and it should be about prime time , that will make a total of 3 weeks bottled. Good luck !

Distilled water has no minerals and isn't ideal for brewing. What's wrong with your tap water?

Nothing wrong with tap water, I just wanted to buy some jugs so I could carry the water to the garage for my second batch. I use tap water now.

Chlorine is very volatile - just allowing the water to sit out over night is often enough to eliminate nearly all of it. Anything remaining will be boiled off. Chloramines are more stable, but tossing in a Campden tablet will take care of them no problem.

If chlorine is your worry, doesn't a faucet-mounted Brita filter work pretty well? (very easy to install, inexpensive, and good for hangover-reducing re-hydrating h2o after a night of consuming too much of your home-produced eTOH?)
