View Full Version : Corned Beef and Cabbage

'Bout time for my yearly batch of CB&C for St. Patrick's Day.

The recipe is straightforward but delicious: potatoes, cabbage, carrots, onions for the veg, a 3 lb corned beef brisket, S&P to taste, bay leaves.

Place the brisket into a heavy pot (I use my enameled dutch oven) along two bay leaves and one tsp of peppercorns, and add enough water to fully submerge.

Cover and bring up to a boil, then reduce heat and simmer 2.5 hours on low.

Add 1/2 pound chunked carrots, 1/2 pound of quartered onion and a pound of quartered potatoes. Simmer uncovered for 15 minutes, then add 2 pounds of cabbage, cored and quartered and simmer another 15 minutes until cabbage and potatoes are tender.

Serve immediately with Irish Soda Bread.

I do CB&C a few times a year and this is my favorite way:
-ground pepper w/ just a touch of salt on the brisket, sear in a skillet (skip the salt if your brisket is really salty to begin with)
-toss into the pot, cover with water...1 onion, couple garlic cloves rough chop, bay leaves
-simmer 2-3 hrs depending on size
-last 30 minutes or so, toss savoy cabbage 1/4s and white potatoes 1/4 or halved depending on size

I really wanted to brine my own this year but just didn't have the time. Pretty much prepare mine the same as k4 but I also add carrots and parsnips.

That's pretty much the recipe I used yesterday, minus the soda bread. Making it again here at work today. :D
