Mainly what is mead sapose to taste like? I bought some awhile back, had a nice taste, but was sooooo sweet that i couldnt have more then half a glass of it.. I wouldnt think it would be that sweet, but then the norsemen did have some really nasty water and nasty tasting meat that they let sit for long times so they needed something balance it all out right?

Mead is supposed to be very sweat. It's made from honey after all.

o.k. thats what i thought.. I just thought since i love!! honey i would love mead. but that wasnt the case.. Just way way way to sweet for me.

Just because it is made from honey does not mean it has to be sweet. Dry to medium meads do exist, but they are hard to find. It seems that meaderies try to impress the honey character upon the public through a sweet product. And that works. But by no means does your mead have to leave crazy legs on your glass and be hard to swallow. It's just that the honey flavor carries better when some honey is left unfermented.
I made a cranberry mead a couple months ago and aimed at the medium-dry range. It finished up at 1.008 and I'm expecting a nice product next year, though it tastes rough now.
Try making a mead! I'm sure you can do better than 12% abv syrup for your pancakes!
I have had mostly dry meads. Not sweet at all.
