So realized that I have made these twice now and haven't put a thread about it. And we need more bacon around here. The recipe is for making two, cause one is just never enough, really though just cut it in half to make one.

Start out with:
5lbs Thick cut Bacon
5lbs Pork Sausage, usually it is half spicy and half regular Italian sausage.
Cajun/pork seasoning of some sort
Your favorite BBQ sauce

So here are the pictures, pretty self explanatory.

First make a bacon "blanket" and season with cajun spices

Then spread sausage out over the blanket, and cover with BBQ sauce

You should have pre-cooked some bacon at this point, what ever was left over from making the blanket, spread precooked bacon over BBQ, I like to put a little fresh cracked black pepper down at this point.

Then take the bacon and sausage and roll it up, this is where having 2.5lbs of sausage in there comes in handy, IMO, it is much easier to roll then just having 2lbs like most online recipes call for.

I take and weave the bacon together at the seams and make sure to roll it seam down onto the grill for the best presentation.

Cook to an internal temp of about 160deg, when you are getting close to the end of cooking start basting in BBQ sauce to allow time for the sauce to bake on.

Slice and enjoy!, I have found a couple of different ways to enjoy the bacon explosion, by itself is fantastic, but I have also found that a slice on top of a mound of pulled pork on a bun is tasty, as well as on top of a cheeseburger.

Tonight I fired up the grill and attempted to concoct this creation. It was pretty delicious but I has some problems with it coming apart. Next time I think i'll use some skewers to keep it together until it's done...great recipe though...I also spritzed mine with a little bit of apple juice while it was cooking. It accentuated the barbecue sauce and bacon pretty well.

Couple of tips on keeping it together while cooking it:

-When you roll it up, roll the sausage up and turn it so the seam of the sausage isn't lined up with the seam of the bacon.
-When you wrap the bacon blanket around it, stretch out the pieces a little and weave them back into themselves, that there I think is key.
-Found this out just the last time I made this. Make them a day or two early and wrap them up real tight in wax/parchment paper and then foil. Then refrigerate until cooking time. Doing that this time I think made a HUGE difference in the cooking of them.

Next time any one makes one take pictures, I would love to see how everyone else is doing it, Also any variations that you make. I have been thinking of adding cheese and perhaps <gasp> vegetables, I think a layer of garlic mashed potatoes would work well in there.

Last year, a guy at work made one of these and brought it in to share with us. The potential is obviously there, but this thing was SO salty it was virtually inedible. I ate half of my slice, and had to stop...salt overload. To this day, I see one of these threads and I get thirsty.

I don't know if it was the bacon or the sausage...probably the latter. We were eating it plain, perhaps it would have worked better in a sandwich.

WOP's bacon explosions are KILLER!!!! Especially the spicy one. They weren't salty at all.

I'm gonna be making a few of these soon. My wife loves the bacon. She was pissed when I told her that I had a bacon explosion. So, it looks like I get to do some more cooking.

I'll have to try that next time. Like I said the taste was great it was just a lil ugly since it came apart. However, it was tasty. Good call, thanks for posting the recipe.

The key is in getting good ingredients. I get everything from a local butcher shop that smokes the bacon and makes the sausage right on site, so not a lot of added salt to it.

I have to agree. I found this recipe in the NY Times, and made it twice once spur of the moment with okay quality meat, turned out bad and we didn't even finish it. I made it again with quality sausage and bacon from a my local butcher and it was worlds better.

Actually, a trip to the 'Natti is already in the works, so this is not out of the question. I will keep you apprised of my travel arrangements fo' sho'.

It turned out much better this time. I put it in the freezer after I rolled it up. Oh, and I made cinnamon-cramel apples for the center to go with the bacon pieces...then drizzed the caramel base over the slices...all I can say is DAMN that was tasty!
