I had forgotten the PITA that is called bottling. Oh well, put off packing up the RIS as long as I could. Been over a year since I had to have this "fun".

You know, I love kegging over bottling, but I have to admin it's real nice having 40+ bottles of some dank ass, big honkin beer.

i don't like letting beer sit in kegs for a long time. i kegged a barley wine once and after drinking on it for 8 months or so it started to go vinagar. it might have been how i handled it but in bottles i've had it go 3 years. but i agree putting beer in bottles is a pita. setting things up for the swap remined me how much especially for a few botles more time cleaning and saNITIZING than filling and capping

I have kept been in keg for over one year without any off flavors.. I am curious to what happened.

Beer is safer in a keg because it's UV blocked. If you store it in a warm area for a long time it can go sour. I've had some in kegs for 6 months with no problems, unless they go through extreme temperature shifts. Then they definitely go bad. Same with bottles though. At least with kegs you know for sure it's going to carb.
