How much does the chocolate malt come through in that? Also are you just using "quaker oatmeal" style oats, or are you gelatinizing them yourself?

The chocolate rounds out the sharp bitterness from the roasted barley; it's a favorite combination in my stouts.

Yep, flaked oats = rolled oats = instant oats. I buy mine from the bulk bin at my grocery.
