View Full Version : Grilled Tuna, Herb Roasted New Potatoes

I am kicking myself for not thinking to take pictures last night but here is the recipe.

2 1/2 lb Fresh Tuna Steaks
1 lb new potatoes washed
4 T Lemon Juice
5 sprigs fresh Rosemary
Coarse Salt (I use Kosher)
Pepper
Garlic powder
Olive Oil
1 bunch of Fresh Parsley

Quarter the new potatoes and place into a non stick roasting pan. Drizzle about 3 T of olive Oil over the potatoes. Strip one sprig of Rosemary and add to potatoes. Lightly sprinkle on Salt, Pepper and Garlic to taste. Place pan into a preheated 400º oven for 15 minutes. While the Potatoes are on the 1st roast, drizzle Lemon juice and Olive Oil on to the Tuna steaks. Let these sit for the next 15 minutes then lightly season with Salt and Pepper. Preheat your grill on high. After the 15 minutes is up, toss Potatoes and add the bunch of chopped fresh parsley. Return to oven for another 15 minutes. When you have 8 minutes left on the timer reduce the grill to low-med. low. Place 2 sprigs of rosemary under each steak on grille. Flip at 4 minutes and cook for an additional 4 minutes. Remove from heat and let sit for 5 minutes. Remove potatoes and toss again before serving.

This is a really fast easy dish that comes out tasting Wonderful! I normally serve it with blanched Asparagus and a fresh salad.
