I have never tasted nor brewed a Scottish Ale, but I was thinking of ordering a all grain kit from AHS to hold me over tell I get more bulk grain. I am thinking of going with AHS Scottish Light http://www.austinhomebrew.com/product_i ... cts_id=388 (http://www.austinhomebrew.com/product_info.php?products_id=388)

I am wanting to go with this kit because it is cheap and I dont know if I will like the Peated Malt. The question is has anyone made a Scottish ale, is it bad or good, any other style recommendations. I am wanting something different since it will be a kit order.

Also if I go with the scottish ale could I use a different yeast on it, I have some Cali Ale, or some British Ale would that be ok?

mdd, I can't tell you much except I've never had a scottish I didn't like. I don't think peated is standard for a scottish though. It's going to add a very strong flavor of it's own that I've never tried.

what about the yeast could I slack and not buy Scottish yeast and use a British or Cali Ale, I know it might not be to style but do you think it would make an ok beer

I dunno dude, I'm not sure how much of the scottish profile is due to th eyeast. HOpefully someone who knows better than I can chime in.
