View Full Version : Roasted Red Pepper Beer Cheese Soup

Sauteed shallots and garlic, reduced 10 oz ESB to syrup consistency over low heat, added 10 oz chicken stock, 6 oz cream, roasted pepper, and about a cup and a half of assorted cheese (add in small increments off the heat).

Pureed with immersion blender.

I think it's pretty good. Could have used a straining or chinoise to make a smoother base, but I was impatient and not serving any important guests.

Rather rich, a little goes a long way.

When I worked at a very high scale restaurant we used to make smoked tomato's and it was great. We smoked them over tea leaves and then pureed them. What you do is you put foil down on a pot, put tea leaves ontop and put your veggies (tomato's) in a steamer ontop of that, then you put it up to a really high heat and let the leaves burn. Makes your house smell like crap and when you do it once you will curse my name and only do it on a bbq but it makes great veggies.

Sounds awesome. I saw on America's Test Kitchen that they tea-smoked some baby-backs before roasting them. Seemed a pretty interesting option if you don't have a smoker.

Love that show! Their lower fat version of Mac and Cheese is daym good.
