OK, I've had a very interesting experience with this yeast. I brewed up a big brown ale with it and had mixed feelings. The profile of the beer kept changing and I didn't like all the harsh flavors being produced. There is an overwhelming "pear" flavor and aroma when this yeast is young, and by young I mean under 8 to 10 weeks.

I just popped a bottle that is a few months old though. I saved like 3 or 4 bottles for possible swaps. This. beer. is. phenomenal. This yeast is amazing after some aging and settling out. I'm gonna send a couple out in the fall swap and get some more opinions, but I've never tasted a beer like it. The fruitiness is dark and mellow and fades into a dark candy flavor. Toffee is too generic a description, but it's on the right track. plum toffee, maybe? With a hint of pear still. I'm mean, it's something else. WIshing I'd let the whole keg sit for a few months.

That's why I'm currently drinking from a keg of ESB that I brewed the first week of April, and a blonde I brewed a few weeks later. :D

Your beer sounds awesome. Make it again, put it away and forget about it for several months!

I bought another 3 gallon cornie today. Kegging three gallons and bottling the remainder is getting to be my favorite strategy. That gives you enough to throw in the kegerator or bring to a party, and lets you stash some away as well.

My brew session got rained out today, I hope it clears tomorrow. I've got ingredients measured out for my standard ESB (using EKG this time for the 2nd and 3rd additions) and a nice dark mild as well. I use S-04, but I wonder how that Burton Ale yeast would work with my ESB...

Pear and honey were definitely the two big flavors I got from Burton but I am totally with you about how it "evolved." When it was young, the pear was dominant (and really quite nice with my ESB) as it aged the honey influence became stronger and really added a new dimension to the beer.
