A little change of plans here. My Ruination is still fermenting away, so I can't harvest the yeast for my Arrogant Bastard I had planned. But I do have lots of healthy 1272 at the ready, and I also have two jars of hop extract I made. Time for an experiment. I found this recipe interesting

Harpoon IPA:

OG = 1.060
FG = 1.013
IBU’s = 40-45
Mash at 152

10 lb 10oz 2 Row
1 Lb Munich malt
1 Lb Victory malt
8 AAU’s Centennial Hops (Boil 60 min)
(1 ounce at 8% Alpha acid)
4 AAU’s Kent Golding Hops (boil 30 min)
(1 ounce at 4% Alpha acid)
1 Oz. Liberty hop pellets (for dry hopping)
1 teaspoon Irish moss (boil 60 min)
White Labs WLP006 Bedford British ale, WLP023 Burton Ale, Wyeast 1272 American Ale II

I have two jars of extract, one from the Ruination hopback addition (1.5 oz Centennial - a 50/50 mix of freshops and homegrown).

The other jar is from an APA (.5 oz each homegrown Cent/Cascade)

I'm going to crunch some numbers and see how much I think will work for the bittering. Maybe all of it. I am also going to use my homegrown Sterling for dryhopping in the keg.

Opinions? Anybody ever try Harpoon IPA, remember what the taste is like?

not a fan...I think the ratebeer rating of 68 is an accurate reflection of my experience with it.

Ok, I was thinking it was low on the ibu for an IPA as well - it looks more in the APA area. Maybe I'll bump up the ibu bit, and bring the Goldings addition to 20 min for more flavour.

What do you think of that? Did you find the AA too high when you tried it? I like the look of that Munich/Victory combo.

I think it has, for lack of a better description, a muddy and undefined flavor while still being somewhat bland. It's not high on the hops but what it has comes off kinda grassy/dusty. I am not sure I would dry hop w/ a Hallertau derived variety.

OK, decided to go with a Victory Hop Devil IPA. Probably could use 1056, but I think it will be good with 1272 at 150f mash and .75lb sugar. I like the use of Pilsner malt in this recipe. I've got 55 lbs here that I haven't touched in months.

Amazing beer - do you have a recipe for this one? And can you get Victory beers in the UK?

I'm going for the Beer Captured recipe, although there is a huge variation in recipes I have seen. One guy at NB says he got inside info that the base grain is %100 Vienna, with Tett for aroma.

The one I am using is Pilsner base, with 8 oz each Munich, Caramunich, and 60 crystal, Cent for bittering, EKG and Cascade for flavour, and Cascade for Aroma.
