View Full Version : Did PH kill my yeasties?

well my porter is done with visable signs of fermentations it had a moderately strong 1 day ferment-fest then died off after that... i moved it up stairs in case it was getting to cold downstars and to see if it would start up again... it really didnt seem to make a difference... im guna go check gravity right now...the only problem was i for got to check the OG before i put it in the carboy :( do u htink the ph was off to much for a good strong fermentation cuz this is the first time i used any dark grains with my tap... and knowing that i had "signs of astringency" in all my judge beer i am worried.

I think your water would have to be pretty acidic to kill your yeast.

not so much kill was but mame, was what i was thinking i have a feeling the alkalynati is up there plus the black malt would of lowered a bit as to make a stress full environment....but...

the gravity is down to 1.014 and it doesnt taste half bad...more malty then expected and a little too chocolaty but good, still tastes a bit green tho (i was thinking "oh no more astrigency" but i think thats just in my head from the judgeing)

When did you brew it?

I think that it is fine, your water would have to be pretty far off for the mash not to moderatly corect itself.

yeah its cool...i just wish i knew my OG...pre boil was like 1.022 with out adjustments I also figgure i have a 25% evaporation rate... but this one boiled over 3 times... i lost alot that way...(which is a first!)

I brewed the 20th and it looked like it was done on the 22nd that thing was fast i had signs of bubbles within 4 hours or so starters are awsome. there is still a few fizzy bubbles on top so I am going to leave it till bout October 3rd or so.

well , my brown porter fermented from about a .065 OG, to about a .010 in like 4 days. so dont worry man, do what you got to do and drink that bitch, or if you think you got a bad batch you can send it to me and I will drink it and let you know................

1.022 pre boil, do you have any idea what the sample temp was, even a guess? That seems a bit light for a porter, but adjusted might be ok. 25% evaporation rate seems way high. Did you measure that with previous boils. 13-15% per hour is more the norm IIRC. What yeast did you use?

as far as i can tell everything is ok... the temp on the SG pre-boil was i think 146ish it tastes fine and thats all that matters to me and 25% boil off was what i figgured out maybe a bit less.... but running full blast 160k btu tends to keep a good boil rolling lol
