Damn, you know, I'm not the best in the world at hitting my target FG's, but as long as the beer tastes good, I'm cool.
About 3 or 4 weeks ago I brewed my first Biere de Garde. Made a nice big honkin starter with the Wyeast 3725, mashed super-duper-crackhead-low (147F for 100 minutes), used sucanat and table sugar in the boil, and just let it roll. Started at 1.071. When the krausen had dropped and there was no more activity, I took a reading, 1.010. Cool. As per usual, left it in primary for a few weeks, took another reading last night, 1.007. Oh. Fuck. Yeah. I could not have asked for a more spot-on fermentation for this style. Booyakasha.

I actually do have a ruined batch that I'll be happy to send you. Finished at 1.040. Just be careful, 'cause glass shards stuck in your eye kinda hurt...:crack:

Thats awasome Evan, My Soured German Wheat (Berliner weisse yeast strain) started out at 1.052 and finished out as it went into the keg at 1.006 :o Not sure of the Attenuation on that one but must be pretty good.:p

Sounds good, you lagering that sucker too?
I usually have good luck with Belgian yeasts - I don't think i've hit less than 80% with a commercially available strain. The Fantome stopped a little shy at 77%, but it's getting bugged, so no biggie there. I suppose my Saison could be a little better than 1.010, but it suits my fancy anyway.

Prolly not gonna lager it. Since I'm bottling it, I don't want to have to deal with the associated problems of overflocculation. I've had too many problems trying to naturally carb beers that have had extended lagering, so I'm just gonna cold-crash pretty briskly and let it carb, then let it lager in the bottle.
