1 Pkgs German Wheat Yeast (Safebrew wb-06) Yeast-Wheat

2.5 cups of watermelon juice


-steeped all grains @155 deg for 30 min.
-added 1 pound of LME at the start of the boil along with the .50oz perle hops
-added the rest of the LME and honey at 15 min when i also added the .25oz perle hops
-added 2.5 cups of watermelon juice in the secondary


out of 18 differnt homebrews this one was one of the fist kegs to empty at a brewing event on 9-16-08. the yeast gives this beer a slightly tart flavor that goes well with the watermelon juice and the malto dextrine. i might try a differnt yeast next time but this beer was very good as is and im planing on entering it into a homebrew contest i will post the results when i get them back.

I tasted this at the brewing event that ben and I were at on 9/5/08. Outstanding brew..........Not over powered by banana flavor and just a hint of the watermelon.

Do you have a good liquid yeast recommendation? I'm not really sold on dry yeasts when they need to produce phenols. I want to do this at the start of next summer...heard rave reviews as a loyal BN listener.

Whitelabs American Hefeweizen (wlp320)
Wyeast American Wheat (1010)

both of those are great liquid yeasts. i was wanting one of them but the lhs only had the dry yeast. you could use any american wheat yeast or 1056 and you should be fine. the dry yeast i used was a german hefeweizen and it was great but i think next time im deffinatly gonna try an american wheat.

I've used WLP320 and was really happy with it. Very subtle compared to a German Hefe yeast.

it was at the dixon. did you try any of the watermelon wheat?

to get the juice i used a blender and a paint strainer. juice only the red meat of the melon and then pour all of it into a paint strainer bag and let the juice run out.

As soon as I can get over the "Don't fruit the beer" thing. I really want to try one of these watermelon wheat's. I guess I'll have to work on that infliction before next summer.

its not bad its really refreshing especially on a hot day. the watermelon is a light flavor and goes nice with the grain bill.

i forgot to post up the results i got from the homebrew contest i entered it into. it got a 37 but didnt win any prizes i was very happy with the results.

Do you have to sanitize the fruit juice or anything? I think i am going to try this on the wheat I just brewed.

i never do but i do sanitize anything that comes in contact with it ie knives, mesuring cups, strainer bags, blender and stuff like that. other than that i just dump it in.
