View Full Version : I'll never buy hamburger/hotdog buns again.

This seems to be a recipe that's been circulating around the internet for a while. It's called something like "Moomie's Beautiful Burger Buns."

Either way, here's the recipe:

1 cup water
2 tablespoons butter
1 egg
3.25 cup flour (I just used all-purpose and it was still great)
2 tsp salt
0.25 cup sugar
3 tsp instant yeast (I just used one pack, which is 2.25 tsp and let it rise a tad longer than originally called for).

I did this in my breadmaker on the dough cycle, but any other type of mixer is fine too. I like the breadmaker because I can set it on a delay so it will basically have completed the first rise right when I get home.

Here's everything so far:

If you don't have a mixer, just bring everything together and knead for approximately 10 minutes, or until the dough becomes elastic and springs back when poked. Cover, and let rise for about an hour.

Once risen, take the dough and divide into 8 equal parts (I actually got 7 regular rolls and a mini-roll, for the mini-hand in the picture):

Once divided, I just rolled them into tight balls (huh huh huh) and put them into 2 lightly greased cake pans. If you want hot dog/sausage buns, then just shape them as you would expect. Preheat the oven to 375°F. Let rise for 45 more minutes.

Bake approximately 12-15 minutes, rotating the pans once, halfway through baking.

Then use for your favourite burger: I like to toast the buns, add some bleu cheese, and sauteed onions, Lightly brushed with some Sriracha (http://en.wikipedia.org/wiki/Sriracha) - BBQ sauce.

I should have added that it's a great recipe because it is basically the quickest fresh bread can be ready and they're still absolutely delicious.

No, this is only the second time I've made them - they're already pretty sweet thanks to all that sugar, that's why they're so brown without a glaze, but I do loves me some honey.

So do they taste like most hamburger bun (cept obviously better) or do they have an entirely different taste? They look absolutely amazing.

They definitely taste better - quite yeasty and buttery. I would say they have similar texture to a regular high quality hamburger bun or kaiser roll.

I forgot to post this


I made your buns about a week ago. They came out very dense. (or is it suppose to be dense?) Did I work the batter too long? I made them in a kitchen aid. They tasted good though, they were just way too dense.

smoked a couple boston butts last night. made the buns today. WOOOOOT! they rock! In fact, I have another batch inthe oven rihgt now! Holy shit! They are so gooooood! One little amendment: flatten the out. I made them into little balls...thye got huge. like my balls. This time I flattened them out. So we'll see .

If they were coming out dense, then perhaps you didn't give them a good enough rise (just like beer, it all depends on the temp). Also, I use rapid rise yeast, so it can be added right in with the dry. If you are using a regular bread yeast, you usually have to proof/rehydrate it in the liquid in order to get the most out of it.

Whew, I was kinda drunk when I posted that. Anyway, I made the first batch, like I said, and served carolina style barbecue on them at a friend's house, and they were a huge hit. The wife, who had been skeptical that they would turn out well, demanded that I make another batch when we got home last night, so I did. Wow, are they great! Thanks, Kyle.

How did the flattening work? I ran into the same problem as shown by my massive hamburger picture.

Worked like a charm. I recommend doing this every time. Just flatten them out a little bit when you form the balls.
