Well I fell into the rabbit hole an did up 7 quarts of cider. I started small with two gallons of cider, 2 cups brown sugar and Cote des Blanc yeast. Kept it in the primary for two weeks and it came out slightly dry so I racked it into a secondary added another two cups brown sugar and some cinnamon sticks for a week. It actually turned out pretty good. Feel free to critique my process, any help refining the process will be taken gladly. Next adventure i think is going to be my own beer.

What did the ABV work out to be? Did you do OG-FG readings?
If, in the future, you want to make something less high octane but still sweet, backsweetening with something like Splenda, lactose, or other non fermentable has worked out well for me.

I didn't take a before and after abv. just went at it willy nilly but next batch will be more refined. this was that "first batch" to get rid of the cold feet I had about attempting making this sort of thing.
