I don't expect our fearless leader Flan to be able to make it since his baby girl will be arriving about 3 months or so before the party, but anyone who attended last year or who has attended in the past is invited to attend again this year. BrewmeisterJeff and Flyangler18 have been invited in the past and have not been able to make it, but both have open invitations as well. UnionBrewer and adrock, because of their relatively close proximity to central Ohio, are also getting invitations this year. Anyone else willing to make the drive to Central Ohio and pay for their own airfare/hotel/meals/etc. is welcome to PM me to inquire about attending.
I don't mean to make this an elitist gathering. It's just that most of the people that I know on HBC happen to be mods, and most of the other people that I know on HBC live too far away to even think about attending.
Last year, I only posted details about Beerfest 'behind the wall' because I didn't want any other users to get offended. Now, this thing has grown so much that I just don't give a shit if I offend anyone or not. This event takes place at my home, and there is only so much space for people to sleep. I'm willing to accommodate a bunch of people this year, but be prepared to be told that you may have to book a hotel room and find your way from my house to the hotel on your own.
Beerfest IV starts on the evening of Thursday, September 8th and runs through Sunday, September 11th. Some show up early on Thursday, most hbt'ers show up on Friday for the epic sharing of commercial beers, and all my friends and relatives show up on Saturday to watch THE Ohio State University play football and drink some excellent homebrews.
If you fall into a category mentioned above, or are named above, let me know if you can attend (whenever it is convenient for you). If you do not fit into the above criteria and ou are willing to get to my house on your own, PM me and we'll see what can be arranged.
The beer theme for this year is German (just like me - isn't that fucking special). Brew up your best takes on German beers and bring your bottles or your kegs. Everything must adhere to the Bavarian Purity Law of 1516... Barley/Wheat, Hops, Water and Yeast.
I'll talk to Flanny and the other mods about this a bit, but just thinking out loud - a German-ONLY BJCP comp may be in order, judged by HBC mods (we'll see what comes of this). I'll also need to confirm with Pseudochef (Dr. Cockface, PhD), but I think that this may finally be the year that we do a beer pairing dinner as well. Something like the following:
Appetizer: Olive Oil, pan fried dunkelweizen potato pancakes with Havarti cheese and cloves and a banana/Weizenbock glaze
Main course: Pan fried Jaeger Schnitzel with home made Roggenbier soaked spaetzel and barley pretzels served with Hefeweizen infused Dijon mustard and sea salt.
Dessert: I have no fucking idea... This is where Dr. Cockface comes into play. I've come up with enough ideas already.
If we're going to do a beer pairing dinner on Friday (I'm also open to doing the dinner on Saturday when there are more people here), then everyone who attends is going to be required to pay to attend the dinner. This shit ain't free, ya know.
There will still be the usual banquet of smoked Brisket/pork/chicken and assortment of side dishes. We can't make *everyone* bring German shit!
Based upon input from last year we will not be brewing this year. Trips to The Hops Shack and my bottle shop are still optional.
As usual, 18 holes of golf at the par 3 course 20 seconds from my house will happen on Saturday morning. Changes this year include a $25 buy-in No Limit Texas Hold 'em tournament on Friday evening instead of brewing.
Please let me know if you are attending, and please be aware that if I tell you no, it's nothing personal. This is at my home, and I have a wife to keep happy. There are only so many people that can be here.

I'll definitely be in on Thursday again, if I can stay at your place. I just found out that I have quite an un-American job in that I have a whole 4 weeks of paid vacation that doesn't roll over - so I'm apt to use it.
I will contact you later about a potential "plus one" - when I get closer to the date. Of course, you have all authority to deny any extra "baggage."
P.S. I immediately jumped at a pumperknickel bread pudding with some chocolate stout, but because of your gay purity law, it might just have to be a regular stout. Fag.

I'm planning on a 2 hour boil. Not sure about yeast yet. I'm thinking about kicking up a massive starter of WLP300 *OR* just saying 'fuck it' and buying one each of WLP300, WLP029, WLP320 and WLP380. I know we won't be able to pick up the nuances of each strain, but it may add some complexity to an otherwise overwhelming beer.
This won't be at it's best until Beerfest V, but we'll try it this year anyway. :)

1.160? For fuck's sake, I don't know if any of those listed strains can handle that much alcohol. It's not technically Bavarian, but with an OG like that, I'd go with the WLP099.

A hefe strain with a MEDIUM alcohol tolerance, let's not forget. White Labs doesn't list the actual tolerance, but according to JZ's yeast origins page, it's the same as the Weihenstephaner, which has a 10% ceiling. Now, maybe my math is wrong, but if you start at 1.160 OG and ferment with a strain that poops out at 10%, then your FG at the 10% barrier would be a happy little 1.085.

In any case, dosing a strain only helps to lessen the pressure from extremely high gravity wort. It won't change the alcohol tolerance of that strain. So if you want to get above 10% ABV, you'll need to actually use a yeast strain that can handle it. You could start out with the WLP300, et al, and then dump a nice starter of WLP099 in there later on. That way you'd get the ester/phenolic character from the hefe, but would still get reasonable attenuation in the end.

The closest one that I know of is in Toledo, but that doesn't mean that there isn't one closer. It's about a 1.5 hour drive to my house form Toledo.
Just hit up the passenger railroad sites and see how close you can get to Marion, or preferably, Columbus. If Flan is coming then I'll be heading down to the airport to pick him up anyway so the closer to Columbus you can get, the better. Driving 45 min to pick him up, then driving 45 min back and 90 minutes to go pick your ass up in Toledo is a bit much IMO.

That's why I'm getting it set in stone now :D ... nah, I talked it over with her. One weekend isn't going to be a huge deal. She doesn't work, she may be in school part time, but she'll be fine for two nights.

By all means, not saying this is a global stereotype or anything, just a trend I've noticed. I'm the type of person that would take a toddler on a train ride across India (we are already talking a bout it). Some people would look at me in shock and horror for even thinking about doing that.

I don't know if I would do that but people that take their new born to summerfest (10 day Music fest in Milwaukee) or Las Vegas amaze me. I have also noticed that people tend to make things more dramatic then needs to be with all kinds of shit. Those that make the statements that your life will change DRASTICALLY are the same who over dramatize even the littlest thing.

In my experience, babies are much, much, much easier than kids. With babies, you just have to feed them, change them, or hold them. Heck, even taking them out is easy because you just snap the carseat into the base. Then unsnap it when you get to wherever you're going, and snap it back into a stroller that you can fold/unfold with a single damn hand (no offense to people without hands). Now, all you have to do is push it around, and hey!, the stroller doubles as a cart for all the shit you buy at the mall, so you don't even have to carry any damn bags! As they get older, you need to strap them in and out every single time - and once they're mobile, they don't want to sit in the damn stroller, but they sure as hell aren't going to walk everywhere. So now you have to carry the growing, heavier motherfucker around. Then put it down when it wants to express its excersicial freedom, then pick it up when it gets "tired" 3 minutes later. I never understood the no sleep thing. Sure, they wake up, but you spend 20 minutes feeding it, then go back to sleep. By 4 months, mine was sleeping through the night. I don't know - I guess I had it easy.
With kids (and not saying anything bad), you need to entertain them - constantly. Read to them, draw with them, cook for them. You're hungover but they want to go to the park? Better fucking take them to the park because it's hella better than parking them in front of the TV while you sleep it off. Worst of all, at some point, you're going to have to start disciplining them - that sucks hard.
TL;DR: I want to be a baby again because it would be socially acceptable to shit myself.

I go to Vegas at least once a year and see toddlers and babies all the time. You know a good alternative to taking a baby to Vegas? ANYWHERE. Literally.
I don't mind, cause that is the parents problem, but if I were planning a vacation with children that needed to be in strollers, Vegas doesn't make it on my list.

I'll definitely bring a Kolsch and get the Barleywine rolling along. Maybe also break my Berliner Weiss cherry, but other than that I'm probably just going to play around with different German ingredients. I do want someone to brew a German Pils and name it Hitler's Moustache (a terrible offshoot of the classic, Your Father's Moustache recipe, if you got the joke).

I'll be doing an Alt and something else.
I was thinking of doing a traditional bock so I could try a decoction mash, but if someone else wants to call it, then that's fine. I'll switch.
I can probably swing 3 or 4 beers total if needed, but probably only one lager due to time constraints(and the fact that I only have the capability for one fermenter in the cooling chamber)

There's a good article on Gose in a recent issue of either BYO or Zymurgy. The style originated in Germany, but outside of Bavaria, so the Purity Law has never applied to it. It's still a German beer though. There are some styles that are German, Purity Law or not. If you want to do a Berliner, then go for it.
I'm not sure that my Gose will quite like last year, as I still haven't pitched the bugs on it yet.

What do you guys think about a Hefe experiment? Same base recipe for all, different yeast and possibly some different mash techniques to give us a bit of a variety to sample the differences. There are only so many Hefe strains available, and as far as I can tell there will be at least 7 participants (FA, BMJ, Flan, PC, Evan, me and Salad)
I'm thinking something like this:
5# Pils
5# wheat
1 oz. Tettnang at 60
Each of us would be assigned a yeast (until we run out - only WLP300, WLP320, WLP351, WLP380 or Wyeast equivalents to chose from), then there would be single infusion vs. single decoction mashes w/the same yeast.
single infusion at 154 until we get all hefe yeasts taken care of, then we'll start adding decoctions
I don't know the entire details of the experiment, but there was a Hefe talk at NHC this year. Gordon Strong was on the tasting panel, and this is what he reported over on TBN board in response to someone asking a question about Hefes:
I like to keep it below 65F. Preferably starting in the upper 50s and letting it rise to 62F or so.
We did a tasting of hefes at the NHC in San Diego that were fermented at different temperatures and mashed differently. The best flavor came from the one fermented cool (62F) and with a single decoction. Harold Gulbransen made them; he's also medaled in this category in the past. He knows what he's doing, especially in this style. So I'm convinced he made all test beers equally well.
I was on the tasting panel, and the difference was fairly clear. A warmer ferment gives a less clean flavor. It still tastes good, but it doesn't taste best. If you can't control your fermentation temps, try brewing it during a different part of the year when the ambient temperature is more suitable. The warmer one had more banana but it also had more of other flavors; the increased esters added an acidity, it seemed, including an apple-like flavor. Without running an analysis on the beer, it's hard to say what all was in there, but I just know what I tasted.
I'm convinced cooler fermentations produce cleaner tasting weizen beers. Don't misinterpret that statement. I can see some people saying, "but I don't want cleaner, I want banana and clove". Meant cleaner relative to that yeast. At cooler temps, you still get banana and clove. You just don't get other things. At higher temps, you do (or more appropriately, you increase the odds that you will).
That said, glad you made it and hope you like it. Warmer temps are not an automatic fail, but if you don't like some of the yeast flavors, I'd try it again with a different fermentation program and see how that works for you. That's been my experience and it seems backed up by others doing their own experiments.

I meant to post this after PC and I were discussing it a couple weeks ago... The concept of a pairing dinner has come up again, I'll give a brief rundown of the highlights and I'd like some feedback.
-Courses to be designed by PC with input from some other 'foodies' who will be attending.
-Courses to be prepared Thursday evening/Friday by whoever shows up in time to assist.
-Right now we're thinking about a 5 course meal with each course either paired or cooked with a German beer style.
-The start time is still up in the air, depending on when most people will arrive, but preferably will start no later than 6pm so that we can finish and still have plenty of time for sampling night on Friday.
-There will be a cost to sit at the dinner. We can't be sure what this is just yet, but obviously it will be dependent upon both the menu and the number of attendees. I'm hoping that it will be no more than $20-$30 per person. Any excess funds collected for the pairing dinner will be used for food, supplies, etc. for Beerfest the following year or to purchase vintage beers to be consumed on Friday night at Beerfest the following year.
That's about it. Hopefully we can start yet another great Beerfest tradition with this. I have no doubts that the food will be fantastic with PC in charge, so the only real questions that remain are:
1) Who is attending for certain? (Obviously me, Lowell, PC, Evan, Flan, salad and chvyta will be there, but I'm wondering more about guys who have expressed an interest in attending but are still up in the air - Ronthered, flyangler18, etc.
2) Would you be willing to pay $20-$30 for a 5 course beer paired meal?

I'm at home this week with the kiddos and just pulled my first sample of Arrogant Nazi. I'm going to go way out on a limb and guess that this keg won't make it until September. I think I have come really close to AB with the hopbill on this one. I wasn't really trying to match AB with the grainbill since I used Pils and Wheat trying to keep it somewhat German, but this could certainly come in handy for later clone attempts.

Well that's kinda what I was thinking, but some people don't see it that way, so you never know. Why don't you get a flight booked and get your ass out here so you can participate in the dinner? (seriously)
5 course meal + 5 beers. If it's $30, that's $6 per course for what is sure to be an exceptional meal (just check PC's food threads for the last, oh I don't know... 3 years) plus a beer per course, and discussion about each course and the beer with a bunch of other beer geeks. Personally, I'm having a hard time thinking of a better way to spend $30. I do need to throw in a disclaimer that it it possible that it may end up being more than $30 depending upon what beers we pair with each course and how much it costs to obtain each of these beers. Rest assured though, that we are not making a profit on this dinner. If we do happen to make a profit, any profit will go towards Beerfest the following year as stated above.
BTW - I'm watching Man vs. Food right now and I just saw a couple things that are incredibly simple, yet sound absolutely amazing:
Bacon wrapped tater tots - Thick cut bacon, lay a tater tot in it with a slice of fresh cut jalapeno, wrap it and deep fry, then cover it with cheese and bake it.
Reuben pizza - Thousand Island for pizza sauce, a crapload of corned beef and sauerkraut, some caraway for seasoning and a buttload of cheese. Of course PC or someone else who is culinararily (sp? - is that even a word?) inclined will need to provide and/or make the dough for this. I can provide spent grains from a German style beer if necessary.
Maybe an hour of Man vs. Food has gotten to my head, but some sort of obscenely huge sandwich consisting of spent grain bread, jagerschnitzel, sauerkraut, bratwurst, corned beef, cheese and some deep fried potato pancakes may be in order. Thoughts? :)

Friday evening is reserved for HBC guys and my closest friends and is when we all share great beers from around the country. Friday is also when we're planning on doing the beer pairing dinner and having a $20 buy-in No-Limit Texas Hold-em game.

That's why I'm designing a bunch of stuff that is going to be made and/or prepared beforehand. Sauerbraten will be marinated for the requisite time, and then I can just stick it in a slow cooker Friday morning. Potato dumplings can all be formed beforehand and then cooked in 10-15 minutes. Breads can be made Thursday and still be relatively fresh by Friday. I'm just trying to figure out an up-scale, beer-ish take on several things.
And of course, any suggestions are welcome.

The method I use (since you mention prep foods) for large scale pretzels is I bake them just until they start to brown. I cool them on racks and then freeze them on sheet trays on parchment. Then into bags. On eating day they can be finished off in a hot oven, this works very well. Also salt them a little more aggressively because you'll lose a bit.

I ended up with a fruit fly in a starter once. (http://www.homebrewchatter.com/board/showthread.php?t=5179) The beer was fine. It did develop some odd mold up at the krausen ring, but that didn't affect the beer's quality at all.

You got me all excited so I decided to look at google maps and noticed that it puts me right through Hammond/Munster - what better way to show up that night than bearing gifts, eh? I was thinking about taking the "scenic" route this time because it's like $12 in toll money and a real PITA if you need to piss and don't think you'll make it to an oasis. I ran into this problem last year driving home that Saturday - I think I took 2 of Lowell's 32 oz gatorades and downed them during my drive to help my hangover. Had to pee horrendously near South Bend, but think about sitting in a car, finding an exit, and then having to stop in a toll line before you can even make it to the damn gas station - excruciating.
Back on topic, no idea what other commercials I'll bring - I really have nothing in the "cellar," but I can always run to the store and see what's happening. I don't think it's best that the two of us kill 2 growlers in a night, so there should be some left over for Friday.
I'll have at least one "German" beer - trying to fit in an Alt, but I don't have any fucking Munich and really don't feel like ordering online, so we'll see. I'll have beer though, it'll be your call whether you want stuff that's not exactly germanic, though. My Choco Milk Stout might be ready to go in addition to this Bretted thing, so we'll see.
Arrival time sounds good. If I leave here by 4 (any later I'm going to get fucked by traffic), it puts me there around 11, so I think we're solid.
I have my own clubs now for golf, but that still doesn't mean I'm any good.

My wife will be 7 months pregnant, so I may have to be content with coming friday after work and leaving saturday around noon, if that's cool.
Whatever you need to do, man. It's all good. We usually tee off around 11am or noon on Saturday, so feel free to take off when we go to golf if that's what you need to do.
On a sad note, I'm not sure if my dad will be able to be here to run the smoker this year. In a crazy-ass/weird-as-fuck accident, he fractured his hip and is currently in a rehab place. All he was doing was pulling the manual release on his garage door opener and the thing broke. He was evidently pulling pretty hard when it snapped, fell, and boom... 3 screws and a rod in your hip and leg. He's just now able to get himself out of bed and into a wheelchair by himself. Not sure if my wife or my sister will be willing to watch the smoker. If not then I'll do it while you guys are golfing. Shit happens.

This is basically what I did, too - what is pseudo about yours?
It has Belgian aromatic and flaked wheat in it, plus a bunch of wet hops straight from the vines. It's still only ~10 days since pitch, but so far it just seems to have a more malt-forward profile than the true kolsch I have on tap right now. I dunno, maybe we could close our eyes and pretend it's a German ale:D

Ok so to clarify, since my post about partially baking and freezing the pretzels was "disliked", it is by no means optimal. The best method is to cook them and eat them right away. But if you decide to make 7 or 8 dozen pretzels by hand on the day of an event....good luck. It means that everyone will be participating, and perhaps that's a better method, otherwise I'd scratch the idea. A few dozen isn't that big of a deal though so it all depends on what else is being made, who's making it and your time frame. I merely offer a compromise to the situation which is both practical and yields good results.

The garage door scares the shit out of me these days. Last year I was opening it and the spring snapped about halfway up. The door flew down and slammed, hard. It sounded like a shotgun report. Those bastards are heavy, I could barely lift it. I'm pretty sure it was the original spring from 1950, so I doubt it will happen again. Still freaks me out when the kids run out under the door.

So I found some large flip top bottles. One is an American Barleywine that's right at a year old and the other is a Smoked Dopplebock that's about 9 or 10 months old. They're in the large fliptop bottles (not sure what size - something like 350ml or 375ml I believe) so they should still have carbonation.
Anyone want me to save these for Beerfest? It's not like there won't be plenty of other beers to drink...

Served my 'rents some Sauerbraten and potato dumplings last night. I'll upload pictures from my mom's camera later today.
Both were good. However, I used the completely wrong cut for the meat, so it basically disintegrated thanks to the lengthy acidic marinade coupled with the low and slow cooking time. I'll need to get a leaner piece (bottom round) so that it actually slices, but still retains the tender texture. The sour-almost vinegar Dubbel that I used worked perfectly. I did cut it with some apple cider vinegar to add a little extra pop to it, and to even out the flavor of the "homemade" vinegar and store bought. I might need to up the spices (juniper, bay leaves, peppercorns, mustard seeds) because they didn't come through too much. I reduced the sauce, but still kept it light. I didn't want the meat overwhelmed by a thick liquid (which I think is the downfall of most restaurant sauerbraten).
The dumplings were bad-ass, I thought, but I'm a potato lover through and through. Mom didn't like them as much. Still trying to figure out how to incorporate beer in them.
Just thought I'd let all attendees know you should start your salad diets now. Two weeks out, bitches.

Not off the top of my head. We'll probably need help cooking Friday, but I already counted on everyone pitching in. Mine is going in the slow cooker Friday morning, then chill off during the afternoon, then a quick heat back up prior to serving. I'll make the dumplings ahead of time as well, then alls I have to do is boil the night of. Klaiber is planning on jagerschnitzel, so he'll have to cook that night of, so we'll get some sort of assembly line going.
All I remember last year (besides being pissed off) is that despite the pizza and ABTs, I was starving late Friday night. Serious non-high, simple drunk munchies.

We gotta figure out a way to get the whole thing cooked through without overcooking the bacon exterior. That thing was delicious, as was the regular Explosion, but the outside was cooked to the point of inedibility (shame to waste all that awesome bacon). Less heat, more time?

I'm pretty sure that I have this under control. My dad has one of these (http://www.hollandgrill.com/) that he's bringing over. He's had it for years and the thing never flares up. The issue with both these and the ABT's on a normal grill is the bacon fat catching on fire and burning the shit out of the food.
