"American craft brewers are getting into it -- at least 30 of them already brew a kölsch..."

I would think a bit more truly. I know all the local brewpubs do at least one if not more a year. I would hope they are considered "craft" brewers. Good article! Beer seems to becoming the new wine these days. People are starting to realise the variety and quality of "good" brew. I'd pay more for a great bomber of beer than I would ever pay for a decent bottle of wine. This is coming from a guy who prides himself in his wine knowledge.

I love Kolshes. So much better than pillsners. Kolsch is dry, little hoppy, and refreshing Billy.Thats the best I could come up with, not really possible to do with dry yeast, but I guess you could maybe use a over attenuating yeast and get close.

I was "practice" shopping yesterday and my next big order will inlclude irish ale yeast, kolsch yeast and some bacteria. I remember st arnold's saying they used kolsch yeast for all of their beers, from IPA to lawnmower. So, I want to give it a try in a few different styles.

The IPA is the only beer they do not use the Kolsch in IIRC
