View Full Version : Bar-B-Que (BBQ) Sauce Recipe(s)

My first attempt at making my own bbq recipe. I've drawn from some other recipes and a few personal tastes and I'm gonna attempt this sucker today. I wanted to roast some pork meet in some chick broth first and use that as the base, but I don't have any pork at the moment. So, suggestions welcome:

VERY SPICY - I'd back off the chipotle if you want it to be more moderate

1 Cup Chicken Broth
6 Peppers (3 sarrano, 3 green chili)
3 cloves garlic (minced)
1 1/2 cup chopped pineapple
1 cup dark red cherries, pitted
1/2 cup marinara sauce (homemade, grandma's recipe)
1/4 cup chianti
1/4 cup white vinegar
1/4 cup honey
1/4 cup dark brown sugar
1/4 cup Worcestershire sauce

2 tbsp spicy mustard
2 tsp chipotle powder
2 tbsp onion powder (or whole onion cooked with peppers)
1 tbsp paprika
1 tsp cumin

salt & black pepper (to taste)

Put a little olive oil in the bottom of a 12 inch sauce pan.

1 Cook the peppers, cherries, garlic & pineapple over the olive oil on medium hea tuntil slightly browned garlic.

2 Mix in remaining ingredients and bring to a boil.

3 Reduce heat to medium-low and cook for half an hour.

4 Put in blend and blend til smooth

5 Cool down in fridge, should last a couple weeks in fridge or longer if frozen.

I'd use cider vinegar instead of white.
I also think you might hold back some of the broth until you get everything in the pot and see the consistency. That might be a little much in relation to your other ingredients and you don't want to have to spend all day reducing. Start with 1 cup and see how it looks, you can always add more.

The ingredients look good. I've never used a marinara before, but it should work well I think.

Good call, gonna cut it down to 1 cup of broth. Also, i'll be blending everything up in the blender once it's done. I don't like chunky bbq sauce. Also gonna throw a little pineapple in. Pineapple juice was the key ingredient in one of the best BBQ sauces I've ever had.

That one looks pretty good. I would change out the wine for some whiskey though, a big fan of whiskeys in my BBQ sauces.

Interesting use of the Marinara, You sure your not Italian? :mrgreen:

Step Grandma is Italian, and it's actually her recipe.. It really turned out awesome, but damn spicy. I like it that way though.

1lb - brown sugar
1gal- ketchup
3 pkgs chili seasoning
1 jar honey
salt
2 tbls coarse ground pepper
small bottle of yellow mustard
1 large onion
2 tsp red pepper flakes
2 tbls garlic powder
2 cups of vinager
Simmer for an hour then put it in the smoker while cooking your meet and let the sauce get good and smokey th top will turn black with smoke then stir it in.

i've been doing this recipe for years and everyone loves it.

Cooking this guy up again today, doing almost double of everything though so I can store some for a while. This was a hit with all the neighbors and the wife, but it's really spicy so heads up.
