How do you prepare them?
I usually like to grill them and serve with a little spot of tequila lime salsa. Maybe something different tonight but what?

Wifey makes a great dish where she cuts the top and bottom off a bell pepper, puts it on the chop, overstuffs it with chopped tomatoes and cooked rice, and cooks that all in a covered pan on the stovetop. It's good shit.
Alternately, you can smoke them...just do it long enough to get the internal temp to where you want it (155 for pork is usually good), and sear it on the grill or stovetop, and finish it with OO, S&P.

I did a parmesean herb encrusted chop on the stove top. Good and juicy but not that tasty smokey grilled goodness.
Smoking isn't a bad idea either! That dish your wife makes sounds tasty too.

Late to the party, but pork chops marinated in molasses+garlic+citrus and a little bit of tomatoes, grilled - then topped with carmelized onions. Dust the top with some breadcrumbs, drizzle of melted butter - then under the broiler for a couple minutes to toast the crumbs.

I like to marinate chops in balsamic, dijon and honey with a few good sprigs of rosemarry that i've crushed up. toss them on a hot grill and the evening will be nice.

So last night was Parmesan herb encrusted chops:
Coated the chops w/
Grated Parmesan cheese
Sage
Rosemary
Thyme
Pepper
Dipped them in some egg then dredged them in some plain bread crumbs. Tossed in a skillet w/ a little bit of olive oil & browned on both sides then baked in the oven for a few minutes to finish them off.
Good & juicy....but not as tasty as just a little bit of salt and pepper then on the coals.
The rest of your recipes sound very good!

Also late but...some favorite ways are:
Tucked away in some homemade Jerk Marinade for a couple days and then grilled over wood coals.
Pan fried to a golden brown, plain and simple and then served up with Rice, Black Beans and a side of Tostones and Mojo to go along with.

Wife marinates them in simple Italian dressing with extra garlic added, then bakes them. Just had them night before last and there were no leftovers. Tasty!

we've done them with BBQ in the crock pot for a pulled pork type meat. can be by itself or on a bun.
or on the grill with a basting mixture of apricot preserves and dijon mustard

I like the Parmesan too. Or just cooked with kraut and served with garlic mashed potatoes.

If the chops are thick enough, I like to cut a pocket in them and mix up a few spoonfuls of stuffing. A little panko, egg, chopped pecans, garlic, parsley and curry powder...or whatever I'm feeling at the moment. Salt & pepper on the outside, close the pocket with a water-soaked toothpick, and onto the grill.
