Meet up with DS and gave him a few beers. The ones in the middle with a S are my sour Pale ale (Het Verzuur Een), T- Trippel, and I is the Belgian IPA. Hope you can read them, I was pretty drunk when I wrote on the caps last night. :lol:

Trippel:

Aroma: Nice toasty bready Belgian smell. Smells a little sweet but being at 13% I have a feeling it will taste great. Little fruity from the Belgian yeast. Very nicely carbed with a very thin white head. Great rusty color with perfect clarity.

Taste: WOW! Nice deep rich tones. Knowing that the ABV is high on this one I can taste the alch ever so slightly. Most of what I am tasting is the dark rich fruity tones from the yeast with a sherry like smoothness. Pretty perfectly balanced as for the malts. Little to no hop taste but that is a great thing. Slight spiciness to it.

Mouthfeel: Very clean and leaves you wanting another drink. Medium bodied.

Overall: This is a great beer! I am looking forward to having the other one in a few more days. The only thing I would do diffrentely would be to spice it up a bit more, maybe temp of fermentation or adding pepper as Flan does. Even then, I doubt that I would change anything.

Thanks, yeah I feel about the same about the spices. I think the oak and Chardonnay, cover a lot of it up. This beer if I remember right finished at around 1.012.

Sour Pale

Appearance: Great golden color. Thin white lacy head. Hint of red to it.

Aroma: Again a Very pronounced Belgian smell. There is a slight sharpness that I am associating with the Brett. Very little malt aroma and little to no hop aroma. I am excited about tasting this one!

Taste: The very fist taste I get is the sour. Love it. Very tart but then it quickly gives way to the malt. Nice balance. The acrid bite lingers just a bit after the malt passes. True to style. Very clean and crisp. Tastes young.

Overall: Another great brew that I would love to drink on a hot day. Clean crisp and refreshing. The sour seems like it just did not develop fully though. Not sure if it is the strain of Brett or the duration of fermentation. Not a flaw, just was expecting a more robust sour. I am curious to brew this one to see how it turns out. Good job with this one.

Yeah, this one I do believe will get more sour after a few months, it is young for a sour beer. I might change this one up when I brew it again, with an addition of sugar when I add the brett, depending on how that works with my other brett beer I did this on. I have not had a chances to taste this one side by side with an Orval, but if memory serves me correctly I think mine is a little more sour. Glad you liked it.

I can not thank you enough. Two great bugs and 6 wonderful beers. Hope you like the RIS. I will be saving you some good yeasts here real soon.

No problem, hopefully I will have more to come. Also did not get to your RIS tonight, ended up smoking a cigar with the neighbor, so figured my pallet was not the best for it tonight.
